The real stems for Taro plants are underground. There are no stems above the ground for Taro. What you have shown on the picture are petioles (leaf stalk)of Taro. They are edible. The oxylate crystals are removed by adding acidic pulp of Tamarind or by adding sour starfruit at the time of cooking.
